  Correct - you can find a pre-release application of the instance randomizer in an old PhilW movie theater render.  He used it to vary people's clothes colors.  Here is a WIP.

  You could definitely use it for the sprinkles. You do need to make a couple duplicates within the replicator though - it randomizes each new duplicate, but doesn't count the replicator replications as duplicates, if that makes any sense. Basically each time you hit control-d it randomizes.

  I love the instance randomizer - I use it (along with global-space noise) to create variations in colors of replicated rocks and plants in a scene all the time.
