Would it be possible to construct a shader such that when applied to a plane it will cause everything behind it to not render, and the plane itself would also be invisible?

sounds like a shadowcatcher function of some sort, I think I could do this in carrara not sure of studio
basally your plane needs to match your background globally in texture or absence of texture

Sounds like you want a so-called "holdout" material for what you would need a bit more than a mere shader. In that case you might want to try that one:
