Responsiveness of viewport very laggy with scenes loaded

Just wondering if this is normal, or if I have something misconfigured...
When I load up a preset scene, most noticably in the Manhattan Loft Kitchen add on.... navigating the view port in texture shaded mode is next to impossible. Super laggy and unresponsive... then it jumps 30 times further than I wanted to go.
Seems I either have to switch to a wireframe mode, or make nearly everything invisible to be able to make adjustements. If I had all of the rooms in the loft all loaded at once, I wouldn't be too suprised by this, but I am a little shocked that my system struggles that much with a single room loaded.
Key specs of my system are 2 x 1080ti, 32GB of 2800Mhz ram, and an i7 6700k at stock speed... and running on OSX.

Wow. In texture shaded mode, not Iray mode?
Yeah, that seems very strange. I'm drawing a blank at what it could be though. I doubt your 1080ti cards are being used for that preview mode, so they're probably not helping.
Is this something new that happened with an old system, or is this a new system ?
What option do you have for Display Optimisation in Edit>Preferences>Interface? If you haven't changed it it will be on None which is probably unnecessary for your system - try Better and if that is stable then try Best.
correct texture shaded.... not the iray preview. I'd argue that everything above hidden line mode is not useable. Heck, it takes 5-10 seconds for the menu with the mode options to actually open in the viewport.
Quality sensors on OSX are hard to come by... so i only really have the gpu temps to go by... but I would lean to saying you are correct on the video cards not doing much. On that note... the CPU doesn't seem to be doing much of anything either... temp on the cpu is 25-29C. it normally hits around 59C at peak load without an overclock.
I'm pretty new to working with 3d... only about 3 months in... so i don't have too much to compare to. I had a 960 when i started. Picked up a 1080ti... and then a second. Until recently, all of my work has been V7 + M7 with a bit of clothing.... so I don't know of a scene ever working any better.
In case its relevant, I'm working in 4k...
Given that the OSX app already has some terrible glitches with the mouse not engaging and disengaging, the added lag from the scene is pretty tough to deal with.
Settings attached...
Update:
Since you pointed out this settings screen, I tried setting display optimization to best.... and that seems to have made a world of difference... any other tips? (and thank you!!)
Update 2:
Thought I'd push my luck, and load up all the Loft expansions at once... and getting little to no lag! - Life is good again!
