Should I be creating sss maps for characters that dont include them?

Some characters have sss maps for the different difuse maps of the character even the eyes sometimes, but other characters do not. Should I be making them for the character and do I use them in place of the color values next sss in the shader?

Do you like the way the characters look now? Could you make SS maps that would improve them for you, if the answer is no?

Typically the advice is to use the Daz Originals character skin shader setup as a guide. I personally do not fully agree with this but I think at this stage it would serve you well to imitate a shader setup you enjoy, whether that is Daz Originals or another.

use them in place of the color values next sss in the shader

If you did the above, this question would answer itself.  The answer depends on the shader.  If you are referring to PBRSkin shader, then the answer to what i think you are asking is no.
