Instances is a non-editable copy of the original, i.e it will look like the original, but can have different orientation and scale. It is very good when you want a large amount of identical objects, as it is light on VRAM (I would suggest to set instance optimization to memery in render settings).
Ultrascenery uses instances heavily, else it would kill your computer.
The default options is you can add a number of instances and that is that. It is fine if you want 20 identical glasses (or whatever), but you will have to position them yourself.
If you want more controle I can suggest something like Ultrascatter which gives you a lot more options for how to distribute your instances.
My suggestion is to try it out. Just load an object and create some instances.
