Quick question about two shortcuts

Does anyone know what the shortcuts are for the following?:

- slowing the movement of a Parameter dial while adjusting it? I thought I recently saw that you had to hold down a key while doing it, but nothing seems to be working here.

- making an object non-selectable using a keyboard shortcut? (like pressing the arrow/checkmark icon next to something in the Scene panel).
