I don't tell anyone. There is not enough 'user engagement' with my renders because I've never used those 3D models to make a full fledged graphic novel or full fledged computer game. I've made computer games but not any I personally want to promote. When I have something that good, I'll know it (I think). It would be the same if someone told me they were any other profession. Maybe if I did a render which I then oil painted or have one of those printing houses print it as if it was a fake oil painting or even wood carved. Most people need material tangibility for feeling really engaged.
I've done a bit wood carving of toon animals and people and folk sort of like that. Those people that did like it makes me think maybe I should get really fast at wood carving & sell it at local tourist shops and/or Etsy for a bit of extra fun. The money paid for those wood carving ain't really enough to really make much more than petty cash but in tourist areas where tourists and natives both know about a long wood carving tradition like in the Alps of Tyrol, Switzerland and southern Germany, there are people that have careers as wood carvers of knick-knacks. Not where I live though. And people, they like pictures of flowers & fruit & nut trees that I've planted in my yard but I really can't take that hobby further until they start heavy bearing; at which time I'll start making traditional recipes gleened from books from places in Europe (typically originally those recipes were created by monastaries, nunneries, and the courts of royal houses so it's interesting to realize the history of a lot of this fancy food when they state it's origins). People like things they'd like to do themselves or actually do themselves but for most anyone, anything 'computer related' goes no further than communicating back & forth on their phones & on FB (also usually on a phone).

People don't ask me. They just assume I fix computers because that's what they know me for. I don't tell them about my art because I can't explain it without showing them. Showing them would shock them and have the villagers at my door with torches and pitchforks.
Important consideration imo is it depends on who I'm talking to and why.
Lots of interesting responses, but the main theme seems to be that explaining it succinctly isn't easy. "Digital artwork" seems to be the simplest choice. But I liked the mention of dioramas, since that is exactly right. So, if pressed for more detail, I think I'll say I create "virtual dioramas".
(And to Daveso: so long as you can still tell its bread and the mold doesn't fight you off, you should be ok.)
I just say I'm a 3D artist, because that encompasses all of what I do from 3D content creation to 3D art rendering and all the other stuff I do that falls under the umbrella of 3D art.
@daveso: Make a bleu cheese sandwich with it and you'll never notice. Might still die, but you'll never notice the taste.
Edited: Well, you might not actually die if the mold on the bread is blue (not black or green, or yellow or ...) and the same as the blue mold in bleu cheese because it's what they get penicillin from. How much is OK to ingest? Well, I love bleu cheese, the bleuer the better, I haven't died yet. But I'm not a doctor, I only play one in the bedroom.
It depends on where you want to tell it : Linkedin, Instagram, Tinder, Facebook, ...
I call it 3D Art. Or "making pictures on my PC".

Interesting question. It's a hobby but the software complexity and knowledge required is significantly greater than my real job in Business Intelligence aka Data Science. I even plugged Daz to co-workers recently when lamenting that our crappy BI software, Tableau, doesn't even tell you what you're about to undo if you click the Undo button like Daz Studio does...and Daz is free.I tell them I'm preparing for Virtual Reality. How fun is it going to be when we can develop our models and walk around them in 3D??

I picked digital artwork, with an adder of, 'you know, on a computer'. It mostly works. More savvy people go, 'oh, you draw on a tablet!' to which I have to answer, no, I can't afford a tablet, because actually I have this incredibly expensive hobby... thankfully I know relatively few savvy people, so I rarely have to confess. I did have someone tell me I should insure my paintings, which led me to explain that they weren't. :-D
I usually just call it digital or 3d art.
I can't talk about it at work and the relatives are not technically saavy. My mom thinks DAZ 3d is a video game. LOL
The virus has pretty much cleared the office. I'm still there because I haven't found a program that would enable drinking coffee remotely, but sometimes I have to talk to them when they call me on the phone => "Can't you send an email?..."
Do they also each talk about themselves as "this one"? If so, I envy you for having Khajiit around.
I drink coffee at home. And work remotely. Unfortunately I still have to talk to people sometimes.

I say digital art...because that's what it is. If they want more detail, then I'll mention that it's 3D art...but usually digital artwork is enough.
I like that answer, but the question seems like it needs context.
As in What do you mean- describe what I do?
Do you mean what the end result is, which is Digital Art........
Do you mean HOW I work or what the process is......which building a digital setpiece and then rendering it...lol, not lol.....
Do you mean YOU need an explanation of WHAT you are looking at? Like WHERE all the bits and bobs came from.....
Do you mean what I CALL MYSELF...as in what kind of artist......
Do you mean what my BUSINESS or HOBBY is known as....as in what professional industry.......

There are so many hats worn that sometimes Graphic Artist is enough. Graphic artist that uses 3D / Digital assets.
As someone else said, it depends on Who's asking?
The more THEY KNOW, the fuller and more detailed answer they get.
And for most of us, the full and truthful answer sounds very pretentious. lol
Basically me too. Yes! That's what I'd say. lol
So, like I wrote earlier, I like the description "virtual diorama". So I tried it out on someone, who responded "What's a diorama?"
I think when I first started out I referred to it as a "grown man playing playing with digital GI Joe action figures", mostly because everything I used was premade and it was more about building a set from pre-made parts and posing the figure in the set.
10 years in, I definitely say 3D artist.
Any character I've used more than 3 or 4 times at this point has an army of custom morphs and jcm's on them to correct Daz's default bends, not to mention custom skins. Any given scene I render usually has custom textures I've made in Filter Forge and Gimp and applied to the scene's props. Most scenes are made up out of dozens of kitbashed parts from other sets or assets bought from CG Trader or TurboSquid. Now I even make the clothes in Marvelous Designer if I can't find the right clothing asset.
I had an ex of mine who is a pro photographer teach me a lot about how lenses and lighting work once Iray came out so I could figure out how best to light and frame the camera.
So in a nutshell, I'm: Sculpting, painting, kitbashing, tailoring, and then photographing it to make the final image I post. I consider that a lot of art
And on top of that I'm still learning something new every month that I tinker with Daz.
I think that's the most amazing part about all of this is that it's so flexible that you can take this as far as you're willing to learn and push yourself.

I'm guessing that Stonemason doesn't introduce himself as "Stonemason" to people IRL.
Search for Stefan Morrell rather than Stonemason.
I don't necessarily discuss my hobbies with people who don't already share some interest in the subjects already, but when I do I refer to my DS activities as "3D modelling". In my opinion it covers the whole thing just fine because most of what I do is placing models in order to generate the sceneries.
