I keep seeing great NPR renders that show the passes done to make the render, and many include a fog and a depth pass ... I've done both to my current scene. Now what am I supposed to do with them?

I believe you make each render pass into it's own Photoshop layer, then stack the layers in Photoshop and have fun blending the layers.  I could be 109% wrong, though.

Lol ... I'm sorta thinking the depth render may become a mask, but I' rather someone explain it to me so I can get started faster rather than dumpling around.

Most common use for depth pass I think is as a mask for things like fog/haze effect.

I personally enjoyed this tutorial which combines a depth render with a render to create illusion of depth in Photoshop: I did have some difficulties applying the same workflow in Gimp, but I feel like I learned something. You can also use the depth render to create a "3D photo" on Facebook, but that's probably for another topic. :)
