OK, so is there a way to stop dForce from simulating ALL characters at once when you hit simulate? I've had it happen twice where I had one character clearly selected, but then all of them in the scene started to simulate which led to some interesting dForce explosions. Just not sure if I'm missing something here.

You can hide the items or characters you don't want to simulate, and run the simulation on the visible one/s only. Then turn the others' visibility back on.
There are other ways, but I find this very fast and easy.

Another way to say what the others have said is, dForce is non-selective. It will attempt to simulate everything vislble. Items that do not have a dForce modifier applied will work as if the dForce Static Modifier was applied and dForce will use those objects to calculate collision—even if the object is "20 feet" away. Leaving these other things visible will slow down the simulation process.
Best practice with dForce is to hide everything not needed for the drape. If a clothing item, for example, doesn't need to drape onto the nearby coffee table, hide the coffee table. And so on.
After you've successfully simulated an object, you can use an option in the Parameters tab to "Freeze Simulation." With that applied, the object will not simulate when running dForce. But hitting the "Clear" button will clear all simulation data in the scene, including those with Freeze Simulation enabled!
If you're feeling adventurous, you can turn the finished simulation into a morph for that object. I've posted a "How To" in my dForce thread here.
I agree with @L'Adair, switch off "visible in simulation" for everything in the scene except what is involved in the drape (cloth and collision object). Another useful tip to know is that you can selectively "clear" the simulation for individual dForce items too. What I mean is that if you just hit the "Clear" button, it will reset the sim for every dForce enabled item in the scene. However, you can clear for only the selected object too by an option in the Right-Click menu on the Simulation Tab. Here's a description of how to create a shortcut for this very useful option:
