I have  My Library in my Documents on D drive, but the path to install is a different one by default in DIM.

Can I just add the new path and remove the default / recommended one?

I usually install everything manually but, I have trouble with 2 garments of the MrsChow 8 prob bundle and thought if I install that pro bundle with DIM, it might work.

Yes, you can add a new path and remove the default one in DIM settings.

If you add your "usual" library DIM will probably warn you that there's non-DIM content installed in that directory when you add the path, but it should work when you add it anyway.
