How can I get any shirt to look like it was ripped open down the front?

If you just want tears to show, you could try using opacity maps in LIE.

as above, creating a custom opacity map would be the easiest way. Getting it right down to fine detail like the edges of the tear looking frayed is difficult. Kinda limited in how much detail you can get by doing this to an existing item
