When buying the pro-bundles, do I only need to buy 1 male/1 female of either G3/G8 to get the anatomical genitals? For example, would I need to buy Latonya 8 and Mabel 8 to use the genitals, or can I just buy 1, and then get the characters I want on top of that?

Correct. One for each generation.

It's the same model in all bundles of the same gender/generation. You don't need to separately buy LaTonya 8's anatomical elements and Victoria 8's anatomical elements, either pro bundle will give the same model, which will work on the other character.

Do bear in mind that not every character will come with textures to use with the anatomical elements though. Daz will not allow it for Teen or Child characters, and some authors prefer not to make them at all.

Or you could skip it alltogether and get a 3rd party gens figure from Renderotica. It's usually more detailed anyway.

Genesis 2 and earlier figures often didn't have a special texture for female genitals - you still had the prop, but applied the regular torso texture to it. There's a freebie at Rendo that allows you to do the same thing on G3F (and, with some tweaking, G8F too). It lets you give the gens the same UV as the torso - so you can then apply the torso texture to it. Useful in cases where you don't have a gens texture for whatever reason:
