In the Editor tab of Render Settings, under the Progressive group, you can adjust the stop conditions. The default fro Max Time is 7,200 seconds (two hours) so you need to adjust that - you can enter a number of hours followed by * 60 * 60 to get DS to convert to seconds or you can just enter a value in seconds. However, in many cases a two hour render may indicate that your scene needs optimisation - most often more light into darker corners (which you can then tame with the Tone Mapping settings if it's too bright).
Render settings -> Progressive Render; Max Time defaults to 7200 seconds. IIRC setting it to 0 makes it unlimited. You'll probably also need to change Max Samples, default of 5,000; this is also a limit, and I think 0 also means 'unlimited' here.
Note that the three stop conditions (time, no. of render iterations, and convergence %) work on a "whichever comes first" basis. If your render still doesn't look right after tweaking the time setting, look at the other two settings.
Also, keep in mind that Iray renders don't actually finish, they hit one of the stop conditions. Only one of them (convergence) is anything to do with how good the render looks, and even that doesn't always apply. A lot depends on the exact lighting conditions and materials settings in your scene — which will of course not be the same from one scene to another.
I usually set mine to the max seconds the maximum samples and 95% convergence. Then, if its going for more than 3 or 4 hours I keep an eye on it and once it looks done, and the graininess is gone I stop it.
