Are there any Medieval-style hairstyles for Male and female figures, for any version of Genesis 8.1 or below?

depends on the country and era (it spans a few centuries)
generally women mostly covered or encased their hair in caps, henins etc
otherwise braids pinned up
men varied a lot from pageboy styles (something DAZ hairs are sorely lacking)
to bowl cuts, curls, even mullets
try womens styles on men
I am referring to the Middle Ages in Europe.
Also, I'd like to ask: I read somewhere that the Smurfs cartoon for most of the series was set in the Middle Ages in Europe. I don't know off-hand what country it was set, but I read on a Wiki that it was believed to have been set in the 11th century.
Peyo was Belgian, so there's a good chance that the Smurf country was inspired by some parts of Belgium.
The Middle Ages in Europe is still a long time - indeed it is esentially a European term anyway, the near east didn't have the same transitions from Empire to post empire to nations and further afield there were no real landmark events tied to the European situation (Islam came during the later early Middle Ages). Look t illuminated manuscripts and church windows and murals for the period and region of interst and take those as inspiration.
I read a series by an author who is an anthropologist and fell in love with Welsh history during her time at Cambridge. She has a number of medieval series that are in the 1200s and 1300/1400s. Besides a historical fantasy set in the Dark Ages. She is careful in her description of male clothing in Wales, England, Scotland, Ireland and France. She has noted the changes over the period of time as facial hair changes during even during a short time, and short and long hair styles for men shift or share popularity, depending on caste and what work one does. She actually ignores womens' fashion to some degree.
You can't assume there was one style of clothing for a period that stretched from the 800s to 1400s and all over the European continent. And it is different depending on age, status in society, religion, work, and of course sex. There were laws dictating what a person could wear, or not, set by the political or religious leaders. Depending where you set your story you need to do some research on that area's history, the flow of power, religion, and as said above, look for original sources. Avoid modern fantasy depections that often are not based in reality.

there still was a fair variety depending on location, the British Isles as they are called now, somewhat behind and mostly copying France as part of the ongoing rivalry and wars for example
the Scots, Welsh and English definitely did not try parroting each other having their own styles

there really isn't a lot Medieval Hair in the DAZ store to be honest to link or I would have
looking at pictures of tapestries and paintings, one really doesn't see a lot of hair and even Historical encyclopedias of fashion do not show much

portraits tended to fanciful too, not depicting reality, people both male and female seemed to prefer wearing headwear covering it all
For females, hair might be worn down until the age of 12 as a sign of becoming a woman, hair was 'put up' along with skirts being dropped down. Put up was mostly braided, wrapped and looped around the head and covered with a cloth, how elaborate might depend on status in society, and if you had a maid to do the work for you. Some of these basic scarf head coverings are still in use today.

It is a twin braided hair, but has morphs (or bones) that allow you to pull the braids up the back of the head. While not as long hair as someone who had been growing their hair out since birth, it is one of the best versions I have seen for a decorous hair style that might be also covered in a scarf or veil.

I have only recently tried Akheloos's hair and have been very favourably impressed. You could possibly increase the length scale on the hair bones, so making the braids a bit longer.

Some of the hairs I have by Akheloos have accessories in them which are a lovely treat and one I just bought, ALO Anitta Hair has a butterfly with posing ability to sit in the hair. And yes, after dealing with hair that is in the millions of vertices, to work with a hair that is well under that is a pleasure.
