I'd like to clarify I mean a character with skin that is the color pink and not just an undertone.

Just apply a pink shader to any character's skin surfaces depending on the texture you want. Or pull the maps from diffuse and translucency channels and change the base colour to the pink of your choice/
If you want truly pink skin, my suggestion would be to use the skin from a character that has pale skin to start with, for example, Salem for Aiko 8 has very pale skin for one of the skin options. Another option would be to use Aiko 8's skin and replace the Base Color texture with the texture used in the Translucency Color texture, so you'll end up with a very light colored skin. From there you can add more pink to the Base Color and maybe setting the Reflectance Tint to a light pink color as well. You can also edit Aiko 8's Base Color texture and set the Gamma from 0.00 to 1.00 and make it much lighter, but I think there would be too much orange and you would end up having to remove the parameters for Base Color and adjust the color(s) too much to reduce the orange, which can be hard to work with in the viewport when you do this + you would probably lose more skin detail doing this.

... but really, making your own pink skin is very easy. Just load any caucasian skin you like and dial some pink into the Base Colour and Translucency Colour channel.
