Like products or setups, I always have trouble getting realistic looking lightin in outdoor environments

yep. HDRIs are totally the way to go. DimensionTheory makes ones that I use all the time. There are numerous good ones here in the store.

Having too bright an even outdoor light down make the scene look more plastic. You can buy outdoors products that would cast shadows on the characters in a scene. I mean products that have trees with leaves in the product. Other thing you can do is set the time of day early in the day or late in the day and avoid 11:00 - 14:00. Also use winter, fall, and spring as dates to make the days shorter, and finally if you do need to do a render say on the summer solstice at noon reduce the environmental intensity to 0.4 or something like that.

DA Real World Lighting is my go to product for outdoor scenes. I do add other lights and render settings with it, but I almost always start with that.
I just use wikipedia for latitude/longitude of real places and GMT time, then set up a date and hour/minutes and that's it (except for lighting by streetlights etc.)
Alas, I never do any portrait shots, but full scenes, where I try to go for a kind of "realistic" look and not those travel catalogue / fashion magazine style... Not that I'm very good at it (yet...)
