I'm looking for a bed you'd find in a peasents home, in a medieval style environment. Surprisingly, I couldn't find such a basic item anywhere. I need the mattress and blanket to have enough poly's so it can be morphed in zbrush.
The model can't be super old. I need something realtively new with high quality textures.

Except it is a long way from what a Peasant would 'own'; presuming they were allowed to own.
... But it's fantasy, which definitely makes it your story. :)
A nice pile of hay with a bith of cloth over it is typical for a peasant or just the hay if a piece of cloth is too much to pay for. Blankets area commodity. If they were better off, they may afford a palette to sleep upon. I've included a few pics to help.;
I can see using the low bed as a Peasant's Cot, especially if the coverlet is retextured as an oxhide or sheepskin.

You could take a pillow, make it much bigger and then morph a dent into the middle with a deformer. Strow some hay onto the floor around it and their you have a peasnt bed.
