The easiest way to change the color on a texture is just to go to the Surfaces tab and change the item's Base Color and/or Translucency Color. The harder way is to take the item's textures into Photoshop, Gimp, or any other art or photo editing program and change the colors there.
Also depends on the use, for personal use, then editing existing textures is fine, but if you plan on selling or giving away a texture, you need to create it from scratch. There are texture templates just for this reason and use.
