Below is a screen shot of the UV view for a surface...it's mainly the square and the other bits......taking up a very small amount of the page.
What can I use to make it bigger? to be it's own map with a big square?

Simply resize the different parts of the UV.
Just make sure you maintain scale between the sections.
Average island scale in Blender, for example.
Well, I just made the surface only the square...so I can just make it bigger?
yes, by remapping so that it takes up more of the UV space. If you mean you want a bigger iamge using the same mapping then that's fine - it doesn't even have to have the same proportions, the U, V coordinates are just relative positions on whatever map is used.
If these are the surfaces as split in daz studio, that most likely is not the full uv map itself. You could have 4 surfaces in daz studio, but all of them placed together on the same uv map; however, using uv view > material in studio will show you the uv islands pertaining only to that surface and not the entire map.
Take Genesis 3 for example. If you select the ears, it'll only show you the ears; however, the ears are on the same map as the torso and the eye socket.
If that is however the entire uv map and all parts to it, you'll want to upscale everything at the same time and then move it around as you'll want the islands to keep relative proportions to each other so the textures don't look off. For instance let's say you have a cube uv mapped so that each side is it's own uv island, if you have some squares larger than others, their textures won't look correct since the uvs don't have proper normalization.
