Anyone have a suggestion to have a completely evenly lit/no shadow/no occlusion Iray render, without making everything emissive?
I'm guessing Interactive of some kind, but I'm not entirely sure.

Not sure. First thing that comes to mind is 4 'ghost' lights, one on each side of the room. Maybe one on ceiling and floor too. Just a thought.
put it in an emissive sphere perhaps
You can create a global ambient light source by creating a simple (25% of so) gray 500x1000 px texture in your graphics program, and bring it in as an HDRI. An 8-bit file is fine; in fact, the less dynamic range the better. This will create an evenly lit scene, with no discernable shadow. You can control the intensity in the usual way.
In a Photoreal render there will always be some shadow and occlusion, but you can control these in Interactive. You could do an occlusion pass, and (maybe, just thinking out loud) use it as a subtractive layer in PS or gimp. As you know, both shadow and occlusion passes must be done in Interactive mode.
